In the bowl of your KitchenAid stand mixer, combine the flour, baking powder, and salt. Mix on low until combined.
Add in the cold, cubed butter and mix on low until the butter is broken up and the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese and diced pimentos.
Slowly pour in the buttermilk, mixing until the dough just comes together.
Turn the dough out onto a floured surface and knead it gently a few times. Pat the dough into a 1-inch thick round and cut out biscuits using a biscuit cutter.
