Prepare the Dough

  1. Combine Dry Ingredients

    In the bowl of your KitchenAid stand mixer, combine the flour, baking powder, and salt. Mix on low until combined.

  2. Add Butter

    Add in the cold, cubed butter and mix on low until the butter is broken up and the mixture resembles coarse crumbs.

  3. Mix in Cheese and Pimentos

    Stir in the shredded cheddar cheese and diced pimentos.

  4. Add Buttermilk

    Slowly pour in the buttermilk, mixing until the dough just comes together.

Shape and Bake Biscuits

  1. Shape Dough

    Turn the dough out onto a floured surface and knead it gently a few times. Pat the dough into a 1-inch thick round and cut out biscuits using a biscuit cutter.

  2. Bake

    Place the biscuits onto the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

Note

If you’re feeling adventurous, try adding a pinch of cayenne pepper to the dough for a subtle kick, or swap the cheddar for a sharper cheese like pepper jack!
